Yummy in the Tummy

Trent brought over fresh caught fish - all cleaned and filleted. It's Christmas all over! Fish caught this time of the year are mild and so very good. I'm sure having them ready to cook makes them even better.

Trent loved fishing even as a little kid. Both his grandpa Kaufman and Shenk were fishermen as was his dad. I don't know why people like to fish - it is insanely boring to me. Those that do seem to enjoy the peacefulness, the challenge, the get-away even more than the eating. They are often "thinkers." I'll just stick to being a "eater."

I've found the best way to cook the fish (thanks to Trent and Randy's suggestions) is to soak in milk, drain, and cover with heavy cream. I make a mix of corn meal and seasoned salt, maybe a little garlic. Lightly coat with the corn meal, fast fry in oil, turn and lay on paper towels as soon as they turn a little golden. My most favorite fish are cold for breakfast - if there are any left.

I once told Trent I was going to make a sticky-on label for his tackle box that said, "Mom loves fish" - just in case he forgets.

Jerry called regularly last week from Georgia with reports of eating all this fresh gulf or ocean seafood. Me - I'm just coveting my the entire batch of home grown and caught fish "all by myself."

I don't care who you are - it don't get no better than this!!
